*Do you have anything dairy free/vegan?

All of our sourdough bread with the exception of our brioche is dairy free and vegan.

Although most of our pastry contains dairy, we do have a couple of vegan options available, and we are continuously testing and developing new products to provide delicious products that anyone can enjoy!

*How do you manage allergens in production and retail?

We are a PEANUT FREE facility. The nuts that we do have in the facility are almonds, hazelnuts, pistachios, and coconut. We also have sesame, poppy seeds, pumpkin seeds, flax seeds, sunflower seeds, rye, spelt, semolina, and wheat flour in our facility and in some of our products.

We do our absolute best to ensure no cross contamination of these allergens with any of the products that do not contain them; this includes switching gloves after handling all products with any of the mentioned allergens above, as well as sanitizing all surfaces and baking and production equipment.

*Do you have anything gluten free?

We do not currently have anything gluten free BUT, because of the nature of sourdough culture and its leavening process, our bread is low-glycemic and much easier to digest. The process in a nutshell: over the course of approximately 72 hours, through the feeding of the culture, mixing the bread, proofing the bread, and baking the bread, the live cultures break down gluten in the dough making a bread with a very small amount of gluten at the end of the process!

For this reason, people who may have a sensitivity to gluten are able to enjoy our bread with little to no problem. HOWEVER, we do not recommend our products for people with Celiac disease, as the bread does still contain some gluten.
